Mini protein pancakes
I am a sweet breakfast girl through and through. These pancakes are great for a weekend morning treat that will love you back. Refined sugar and grain-free, this recipe is intended for mini pancakes and will (unfortunately) fail if you try to do full-size pancakes. Also, expect the pancakes to be on the thinner side!

Servings: 3
About 12 grams of protein per serving - if you are trying to hit protein goals, I would add a side of turkey bacon!
Ingredients:
1 1/2 ripe bananas (or two small bananas)
3 eggs
1 scoop protein powder (I used Truvani chocolate)
1/2 tsp baking powder
Splash of milk
Splash of vanilla
Cinnamon to taste / preference
Optional toppings: nut butter, maple syrup, greek yogurt, berries, butter
Directions:
Add all ingredients to a blender and blend until thoroughly mixed. Butter pan on low-medium heat (you don’t want your pan too hot!). Pour batter into small pancakes (1-2 inches width). When the pancake starts to bubble, wait another 30 seconds or so and flip! The pancakes shouldn’t be difficult to flip so if they are falling apart, give them a little more time. Once flipped, the other side will cook relatively quickly.
Create your pancake stack, top with your toppings of choice, and enjoy!
