Better egg bites
These egg bites are simply perfect. They're perfect for meal prep, perfect for a high-protein breakfast/snack, and perfect for personalizing to your flavor preferences. All you really need is 2 ingredients: eggs and cottage cheese!
If you are not on the cottage cheese bandwagon, don’t let that stir you away. Its texture and flavor disappear, leaving behind beautifully fluffy and high-protein bites!
In this specific recipe, I did simple veggies. However, adding an extra protein source will boost the overall protein content. I left a few ideas for different variations below!
The main thing to note is if you are using any veggies in the bites, I recommend lightly sautéing them before baking. This step is unnecessary if you aren’t including veggies.
Time: 30 minutes (10 minute prep, 20 minute cook time)
Servings: 4-6 (great meal prep!)
One serving is 2-3 egg bites. Each egg bite contains 7-10 grams of protein and 70-90 calories, depending on which variation you make! (i.e., ham & cheddar will be higher in protein than simple veggies)
Ingredients:
Egg base: 10 eggs, 3/4 cup cottage cheese, salt & pepper
For simply veggie:
1 pepper
1 large handful of spinach
Directions:
Preheat the oven to 350. In a large bowl, whisk together eggs and cottage cheese. Finely chop a heaping handful of spinach and stir it into the egg base with salt and pepper. Set the bowl aside. Dice pepper and add it to a saucepan on medium heat. Lightly sautee pepper (takes about 5 minutes). Remove the pan from heat and set aside.
If necessary, spray muffin pan with avocado oil to prevent sticking. Fill each muffin tin about 3/4 of the way with egg base. After each tin is filled, evenly distribute sautéed pepper.
I like to use a spoon or fork to mix each bite so that the veggies are evenly distributed, but this is not essential.
Place the egg bites in the oven and cook for 20-22 minutes.
