Mediterranean chickpea wraps (v)

Time: 10-15 minutes

Ingredients: 

Butter lettuce leaves or uncut romaine, ½ can of chickpeas (no added salt), ½ of an avocado, dijon mustard (to taste), sea salt (to taste)

Veggie add-ins: 

Cucumber, red onion, red pepper, sweet baby grape tomatoes

Toppings: 

Kalamala olives (optional), feta cheese (optional), microgreens (optional)

Directions:

Mash chickpeas with fork. Add mashed avocado. Mix in dijon, lemon juice, and salt to taste. Stir in diced veggies. Place chickpea base in lettuce wrap and add toppings of choice! (olives, feta, microgreens, more veggies, etc.)
